I wanted to make something special for Valentine’s Day but didn’t want to spend hours slaving away in the kitchen as I wanted to be able to spend my time with Tom instead. Obviously it was going to be something sweet, you know I love my sweet treats! When suddenly, upon peering through the cupboards it struck me, Rice Krispie treats!
Tom’s a bit of a fiend for marshmallows and I knew if I used mostly pink ones they’d be a gorgeous colour that is ideal for that Valentine’s twist! I also dug out a heart-shaped cookie cutter just to make them a little bit more Valentine’s themed.
These are pretty easy to make but a second pair of hands is always useful when adding the Rice Krispies to the pan. You wouldn’t think it, but there are a lot of varying recipes out there for these but these are the ratios I found works best for me.
What you need
- 200g marshmallows
- 200g Rice Krispies
- 50g butter
- Greased brownie tin
What you do
- Melt the butter in a pan
- Add the marshmallows and keep stirring. When they melt leave them on the heat for about 2 minutes more. Really, don’t stop stirring.
- Take off the heat and add the Rice Krispies.
- Once they’re all coated in the wonderful marshmallow goo, tip them into your brownie tray.
- Push down so it’s all nice and compact and leave to cool.
I put mine in the fridge but once they’d fully set they were impossible to get the cookie cutter through and they had to be cut into squares. The second batch I cut up at room temperature and that was a lot easier. Cutting them into hearts also meant I had lots of off cuts to eat.
My biggest tip here would be to work quickly though. Once those marshmallows come off the heat they start going stiff fast!
