Tom and I joined his family on Dunstable Downs this Saturday for a family day. It was really nice. We caught up with the family, saw the strange sights the kite festival had to offer and played rounders. I was captain of one of the teams and we totally won by the way!
Anyway, instead of making up a picnic of the usual goodies we decided that we’d do something a little bit more exciting and put together a picnic loaf.
It looked more impressive than a few barmcakes and scotch eggs, tasted pretty fantastic (even if I do say so myself) and was really easy to make.
Here’s how we did it:
What we used
1 Wholemeal tin loaf
Green pesto (2 tablespoons)
Mayonnaise (4 tablespoons)
2 Roasted peppers
6 Sun dried tomatoes
Fresh basil (small handful)
Parma ham
Jarlsberg slices
Brie
Salami slices
Cucumber
Little gem lettuce
I say what we used rather than recipe because it’s just a case of stuffing it full of all the tasty things that you like to eat.
How to make it
Cut the top off the loaf horizontally.
Scoop out most of the bread to make space for the filling. (You could use the middle for breadcrumbs if you’re so inclined afterwards.)
Mix together the pesto and mayonnaise.
Chop the peppers, tomatoes and basil and mix together.
Spread the pesto/mayonnaise mix inside both pieces of the loaf.
Now start layering. We went with pepper/tomato mix, parma ham, jarlsberg, brie, salami, cucumber and then little gem. (Although after eating it I wish I’d separated the two cheeses.) Keep repeating until the loaf is totally full.
Replace the lid and wrap as tightly as you can in cling film.
Pop a plate and a bit of weight on the top and stick it in the fridge. We left ours overnight but as long as it’s in there for a couple of hours it should be ok.
Cut into wedges and serve.
